espresso chocolate chip banana muffins
Ingredients:
- 3/4 cup butter melted 
- 1/4 cup granulated sugar 
- 1/2 cup brown sugar 
- 2 eggs 
- 1 tsp vanilla extract 
- 4 ripe bananas 
- 1 3/4 cup all-purpose flour 
- 1 tsp baking soda 
- 1/2 tsp salt 
- 1 cup semisweet chocolate chips 
- 1-2 tbsp espresso powder 
Streusel:
- 1/2 cup butter melted 
- 1/2 cup flour 
- 1/4 cup brown sugar 
- pinch of salt 
Instructions:
- Preheat oven to 350 F 
- In a large bowl, add sugars and butter and whisk to combine. Then, add vanilla and eggs and mix. 
- In a separate bowl, mash up bananas and add them to the muffin batter. 
- Add in flour, baking soda, espresso powder, and salt. Once combined, fold in chocolate chips. 
- Fill muffin tin with the batter. Then, start on the streusel. 
- Mix butter, flour, sugar, and salt with a fork until the streusel becomes crumbly. Sprinkle on top of each muffin. 
- Bake muffins for 20-25 minutes. Enjoy!
